Sometimes all you want is a quick and easy dinner. That’s where BFD (Breakfast For Dinner) steps up. One of my favorite quick and easy breakfast or breakfast for dinner recipes is Piggy Pudding.

Preheat oven to 425 degrees and butter the bottom of a 9-inch square baking dish.

Breakfast link sausages, 12 to 20 depending on size (you need to cover the bottom of the baking dish)

4-5 apples, peeled, cored and cut into ¼ inch slices

1 pkg. of yellow cornbread mix, batter prepared to box instructions

Cook sausages over medium heat until done, pierce to let out fat. Place in baking dish, layer apples on top, pour batter over the top, bake until done, about 30 minutes. Serve with maple syrup.

This quick quiche (my late husband somewhat inelegantly called egg pie) doesn’t use a crust, and can be quickly assembled.

Preheat the oven to 350 degrees. Lightly grease a 9-inch pie pan.

8 slices cooked and chopped bacon or a large handful of bacon bits

4 ounces shredded cheese, your choice

1½ cups milk

4 large eggs, beaten

½ cup all-purpose flour

¼ cup finely chopped onion or green onion

2 tablespoons butter, melted

Salt & pepper

Cover the bottom of the prepared pie pan with shredded cheese and crumbled bacon. Whisk together milk, eggs, flour, onion, butter, salt and pepper in a large bowl until smooth. Pour mixture over cheese and bacon in the pie pan. Bake until the center is set, about 35 minutes. Serve hot or cold.
