It seems my retro cooking heritage is popping up all around me. I recently received an email from one of my cooking best friends saying the following recipe is making the rounds. I used to make this all the time when entertaining, it is attractive and tasty. I like Major Grey’s Chutney; easily found and affordable. One caveat is to never use cooking sherry, it’s dreadful.

Chutney Cheese Spread
1 8 oz. package cream cheese softened
2 Cups shredded sharp cheddar cheese (about 8 ounces)
2 Tablespoons dry sherry
1 Teaspoon curry powder
¼ Teaspoon salt
Dash of hot pepper sauce or cayenne
½ Cup mango chutney, finely chopped
¼ Cup finely chopped scallion (green onion, white and pale green parts)

Blend everything but the chutney and scallions until smooth and very well mixed.
Spread on a serving plate and shape into a round cheesecake about ¼ inch thick.
Cover and refrigerate until firm, about 2 hours. (I used to make this a day ahead, refrigerate and cover well with plastic wrap to keep a crust from forming)
At serving time, spread chutney over top and sprinkle with scallions. Serve with crackers.
